This chemical reaction is triggered at temperatures between 150-200degC. It’s responsible for browning the coffee beans. Also, it creates the 800 aroma and flavor compounds in the roasted coffee beans.
The coffee beans heat rises to around 205degC, and the water in them vaporizes. This causes the beans to crack and expand. This is called the first crack. The roasting process can now proceed to darker roasts or up to the second crack, as the cellulose within the bean cell wall breaks apart. However, lighter roasts such as ‘Blonde Espresso” are usually finished right after the first crack.

What Makes Blonde Espresso Roast Stronger?
